Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • 1 large egg

  • 1/3 cup melted butter or vegetable oil

  • ¾ cup milk

  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

  3. In a separate bowl, beat the egg, then add the melted butter (or oil), milk, and vanilla extract. Stir to combine.

  4. Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

  5. Gently fold in the freeze-dried blueberries (and lemon zest if using).

  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.
